Paneer Masala

INGREDIENTS : Paneer-200 gms cut into medium pieces, ginger, garlic paste-2 tsps, curds-¼ cup, green chillies-4, onions-2 chopped, tomato chopped-2, chilli powder-1 or 2 tsps, dhania powder-1 or 2 tsps, turmeric powder-½ tsps, garam masala powder -½ tsps, kitchen king masala powder-½ tsps, Sugar--½ tsp, jeera seed-1 tsp, curry leaves, fresh coriander leaves, coconut milk-½ cup, oil 2 tbsps, salt.

METHOD: Heat oil add jeera seeds, onions, curry leaves, ginger, garlic paste, green chilies fry, add tomatoes, dry powders, fried paneer(soaked in curds), ½ cup water, salt and cook well, lastly add coconut milk, cook for 2 or 3 minutes, garnish with fresh coriander leaves.

Orange Sweet

INGREDIENTS : Paneer - 200 gms, sugarless Khova - 100 gms, fine sugar - 100 gms, orange emulsion - ½ tsp, orange segments for decoration.

METHOD: Smoothen paneer, Khova and add sugar, emulsion mix well to form a smooth dougth. Divide into 15 balls, lay them in a paper cup on each ball keep one orange segment. Refrigerate for 2 hours and serve.

Paneer Roll

INGREDIENTS : Nandini Paneer - 200 gms (grated), Sugarless Khova - 100 gms , Powdered sugar - 100 to 150 gms, Pista - 25 gms, Dessicated coconut powder - 50 gms, Pista essence - few drops, Green colour - ¼ tsp.

METHOD: Grate paneer, smoothen khova mak a soft dough by adding sugar, colour and essence (if it coarse put it in the mixie for two minutes) make small oblong rolls and keep aside. For powder pista and dessicated coconut add drops of green colour mix and keep aside. Roll paneer rolls in the pista dessicated coconut powder, cover with silver foil. Keep in the fridge for 1 or 2 hours.

Mango Rounds

INGREDIENTS : Paneer-1 packet, khova-½ packet, fine sugar ½ cup, mango emulsion 1 tsp, dessicated coconut 100 gms, cherry few.

METHOD: Smoothen paneer, khova, add sugar, emulsion mix well. Divide into 15 ball and roll in dessicated coconut, keep one cherry, refrigerate for 2 hours and serve.

INGREDIENTS : Paneer 200 gms cut into small pces, Ginger paste - 1 tsp, Garlic - 1 tsp, Turmeric powder - ½ tsp, Cashew - 50 gms, Onion - 1 chopped, Tomato - 1 chopped, Capsicum - 1 chopped, Spring onions - ¼ cup, Ajinomoto - ¼ tsp, Salt to taste, White pepper powder - ½ tsp, Jeera powder - ¼ tsp, Garam masala powder - ¼ tsp, Red chilli powder - 2 tsp, Dhania powder - 2 tsp, Cinamon - 1 pce, Cardamom - 2 crushed, Cloves, Fresh Coriander leaves, Oil - 2 tbsp, Ghee or cream - 2 tbsp, Saunf - ½ tsp roasted & powdered.

METHOD: Heat oil add jeera seeds, onions, curry leaves, ginger, garlic paste, green chilies fry, add tomatoes, dry powders, fried paneer(soaked in curds), ½ cup water, salt and cook well, lastly add coconut milk, cook for 2 or 3 minutes, garnish with fresh coriander leaves.
